MOCHA CUPCAKES
Ingredients:
*2 eggs
*3/4 cup brown sugar
*1 tbsp powdered instant cofee
*1 tbsp vanilla essence
*1 1/4 cup self-raising flour
*1/4 cup cocoa powder
*1 cup vanilla yoghurt
*some cocoa powder for dusting
Preparation:
1. Preheat over at 180 Degree Celcius. Line 12-hole muffin pan with paper patty cases.
2. Using an electric mixer, beat eggs & sugar together for 3-4 mins or until fluffy. Add coffee powder and vanilla essence. Beat until well-combined.
3. Sift flour and cocoa powder together. Fold lightly through the egg mixture, alternating with yoghurt until just combined. Do not over-mix.
4. Spoon mixture into patty cases until almost full. Bake for 12-15 mins.
5. Cool in over for 5 mins then transfer to metal rack to cool completely.
Dust with cocoa before serving.
Makes 12 cupcakes
